Posole Soup

I usually watch the Today show every morning. This recipe looked good, and was even better after I changed some stuff. Here is my version. Of course it is the spicy version, I changed out the turkey for chorizo and used chipotle chili powder instead of ancho, plus a couple other little things. It was fantastic!!!

Posole soup

1.5lbs. of chorizo
A couple of TBS. of olive oil
1 large onion, chopped
2 red peppers, chopped
1 sm. Jalapeno, chopped
½ tsp – 1 tsp. of chipotle chile powder - spicy
½ tsp – ¾ tsp. of cumin
2 garlic cloves, chopped
1 – 15 oz. can green chilis
1 – 2 cups crushed tomatoes
2 quarts chicken broth
2 cups of water
1 -15oz. can golden hominy
1 - 15 oz. can white hominy

Can add cilantro, scallions and sour cream to serve.

Brown the chorizo. Take the chorizo out, leaving some of the grease, add a couple TBS. of olive oil. Saute the onions, red peppers, jalapeno until soft, add the garlic in for the last minute. Add the chili powder, cumin, green chili’s, browned chorizo, chicken broth and about 2 c. water. Bring to a boil and simmer for 30-45 minutes. Then add in hominy the last 15 minutes.

Serve with cilantro, scallions and sour cream, if you want.
